Multigrain Pancakes With Homemade Peanut Butter

Its March 2020 and we have almost finished two weeks of lockdown !!! All thanks to the crazy corona virus which has turned the world topsy turvy. Everyone is scared and is staying put in their homes. No one is stepping out of their homes except for getting their essentials and emergency services.
One more thing due to this lockdown is that ingredients which are not important are off the shelves. Peanut butter is one such ingredients which I'm not able to buy at my nearest grocery store. Aaaand my dear son cant function without his daily dose of a spoonful of peanut butter. So today i tried my hand at making peanut butter and it turned out really well !! Super tasty and delicious and without any preservative !!!

Peanut Butter:
Ingredients :
1 cup of raw peanuts
2 tbsp honey
2-3 tbsp of peanut oil
pinch of salt.

Method :
Roast the peanuts in a teaspoon of peanut oil till it becomes really aromatic and crunchy. While it is warm put in the blender and start blending it; add the salt to this. Initially it will break down into crumbs , then become a powder. Just after this stage, keep processing, the heat will make it come together and will become kind of a paste but still rough. Keep blending. Now you can add the honey and keep adding half spoonfuls of peanut oil till it becomes a smooth paste and to a dripping consistency. Now stop blending and put the peanut butter in a glass jar. after it cools down , you can cover the jar and keep it in the refrigerator.

Multigrain Pancakes:
Ingredients:
1/2 cup multigrain flour
1 egg
1 tsp baking powder
1/2 tsp vanilla essence
2 tsp brown sugar
milk to make a paste

Method:
In a bowl add the egg, sugar, flour, vanilla essence, baking powder. Add the milk bit by bit till you get a smooth batter without any lumps.
Heat a pan, pour ladelful of the batter. Add some butter and fry both sides till golden brown.
Serve the pancakes warm with a generous :) drizzle of the homemade peanut butter and sprinkle some chocolate chips or chocolate rice over it.
