Butternut squash soup and mini sandwich pizzas

Hi friends, Been away from my blog for quite sometime now. My daughter's exams are finally over and its now time for some awesome outings and fun with my daughter !!! Today it was raining cats and dogs in my part of town. Such a wet weather so couldn't possibly go out. Decided to make something really hot and spicy for dinner. So here goes...........

Butternut squash is a form of pumpkin. Slightly longish and has a sweetness to it.Adding spice to it, gives it a wholesome flavor. It goes well with both Asian and Mediterranean flavors . Due to its yellow colour it is extremely rich in vitamin A and vitamin E.

Butternut Squash Soup:
Ingredients:
1 medium sized butter nut squash
1 medium onion, chopped
1 potato chopped
3 dried red chillies
2 cloves garlic
1/2 bunch coriander leaves with stem
1 cup skimmed milk
2 tbsp olive oil
salt and pepper to taste

Method:
Chop the squash into medium pieces. In a pot heat 2 tbsp of olive oil. Add the chopped onions and garlic cloves. When translucent, add the chopped potatoes, squash and red chillies. Let them saute till the vegetables are soft. Next fill the pot with water till it covers the Vegetable. Add the coriander leaves with stalks. Add salt, and pepper and let it cook till the vegetables and very soft and mushy. Add the milk and blend the entire concoction. Let till boil for a few minutes and switch off. You may adjust the seasoning as per your taste. This is soup is really wonderful in a rainy cold weather.

Mini Sandwich pizzas:
Ingredients:
1 small onion , finely chopped
1/2 cup chopped red, green and yellow capsicum
3-4 mushrooms , chopped
1/2 cup of corn kernels
1 tbsp mixed Italian herbs
1 tsp red chilli flakes
2 tbsp pasta sauce
salt to taste
1 tbsp olive oil
Mozzarella cheese, grated
slices of bread

Method:
In a pan , heat 1 tbsp of olive oil. Add onions, capsicum, corn ,and  mushrooms to it. Saute till almost done. Add the Italian herbs, chilli flakes and salt. Add the pasta sauce. Let it cool.
Add 1-2 tbsp of vegetable filling on a slice of bread. Top with grated mozzarella cheese and grill it in the oven for 8-10 minutes at 200 degree Celsius.

Serve the hot mini pizzas with a nice, warm bowl of butternut soup and beat the cold, rainy weather !!!!!
