Chocolate Carrot Slice


Hi friends, This recipe has been taken and adapted from my baking book. The original recipe warranted walnuts and mixed dried fruits , but I substituted them with a mixture of dried mixed fruits and raisins, as well as substituted walnuts with pine nuts. You can make do with any nuts and dried fruits available at home.




Ingredient :
125 gm self raising flour
1 tsp cinnamon
170 gm caster sugar
80 gm finely grated carrots
185 gm mixed dried fruits+ raisins
90 gm chocolate chips
30 gm desiccated coconut
2 eggs
90 gm unsalted butter
40 gm chopped pinenuts

Method :
Preheat the oven to 180 deg Celsius. Lightly grease a shallow tin about 9 inches square tin and line the base and sides with baking paper.
Sift the flour and cinnamon into a large bowl. Add the caster sugar, grated carrot, mixed fruit, chocolate chips and coconut and stir until just combined. Add the beaten eggs and melted butter and stir till combined.
Spread this mixture into the tin and smooth the surface. Bake for 30 mins or till golden brown. Allow to cool and then turn it out onto a flat surface and cut into slices.
