Roast Pumpkin & Tomato Soup


This is a soup which I often make especially in the rainy season or when i really cant think of what to make for dinner. 
Ingredients :
1 cup chopped pumpkin
2-3 Tomatoes , big
2 tbsp Olive oil
1 Onion big, Chopped
1 clove Garlic
1 tsp oregano dried
1 tsp parsley
a generous puinch of Nutmeg
100 ml vegetable stock
100 ml single cream

Method :
Toss the chopped Pumpkin, Tomatoes, onions and garlic with olive oil, salt and pepper. Roast them in a 180 degree oven for about 15-20 minutes. Grind the roasted vegetables with some water. Add the vegetable puree in a pot and add some vegetable stock and all the herbs. Boil till it bubbles. Next add all the dried herbs, salt and pepper. Finally add the single cream. You can serve the soup with fried or baked bread croutons.
