Asparagus & Leek Soup


Asparagus and Leek soup is a very light and delicious soup. Asparagus is a spring vegetable , which is extremely rich in folates and potassium. It is very high in antioxidants and also has diuretic properties.

Ingredients :

1 bunch of asparagus, young and tender ones
1 potato
1 bunch leeks
1 onion
1 clove garlic
1 cup light cream
salt & pepper to taste
1 tsp of mixed herbs
vegetable stock
1 tbsp olive oil


Method :

Wash the leeks well to take off all the soil. Chop the white and light green portions and keep aside. In a pan heat 1 tablespoon of olive oil. Add the chopped onions, garlic and saute till soft. Next add the chopped leeks, asparagus and potatoes. Saute till the vegetables are soft. Add vegetable stock to cover the vegetables . Season with salt and pepper and let it simmer till the vegetables are done. Puree the contents and return to the pan. Add the herbs and light cream and let it boil once. Serve the soup hot with bread sticks or bread croutons.
