Vegetarian Meatballs Spaghetti
Thanks to Covid-19 there’s too much of family time. Especially when there’s a teenage son at home who is studying for his board exams. Meals have to be fulfilling and nutritious at the same time.
Today I’ve made a vegetarian version of meatball spaghetti.
Ingredients:
Meatballs:
6-7 pieces of mushrooms
1 onion , finely chopped
2-3 cloves of garlic minced
2 tbsp oats
1 slice of brown bread (could be any bread)
Salt to taste
1 tsp Italian herb seasoning
1 tsp chili powder
Method:
Finely chop the onions, garlic and mushrooms. Heat oil in a pan. Add the chopped onions, garlic and mushrooms to it. Sweat them till translucent. Remove it into a bowl. Add the oats, crumbled bread , and all the seasonings. Make balls out of them and fry them in a kuzhipaniyaram pan like this.
Keep the balls aside till the sauce is ready.
Sauce :
Ingredients:
1 tbsp flour
1/2 cup milk
1 tsp olive oil/ butter
Salt to taste
1 tbsp pesto sauce
1 tbsp cream
Method:
In a pan heat the oil. Add the flour and roast till the raw smell is gone. Add the milk and stir till it forms a smooth sauce. Add the pesto, salt and cream. Keep aside.
Boil a handful of spaghetti in a pot of hot water. Once it’s cooked al dente, you can plate the ingredients. Add the spaghetti into the serving bowl in a swirly motion. Pour the sauce over it and place the meatballs on spaghetti.
Serve the Dish hot and enjoy !!!
