Cranberry Orange Cake
My most famous teacake so far has been the cranberry and orange cake !! I'm sure all my friends will agree in unison. Its a very easy cake and can be made egg-less too. I used to make small portions of this cake and gift my friends during Deepavali.
Ingredients:
Multigrain flour - 2 cups
baking powder - 1.5 teaspoon
baking soda- half a teaspoon
salt - half teaspoon
Orange zest - 1 tablespoon
cranberries - 1.5 cups
pecans -1/2 cup
butter - 1/4 cup or oil- slightly less than 1/4 cup
brown sugar - 1 cup
eggs 1 or yogurt - 1/2 cup
Orange juice - 3/4 cup
Method :
Preheat the oven to 350 degree Fahrenheit. Whisk together flour, baking powder, baking soda and salt. Stir in the orange zest, berries and nuts. Cream the fat and sugar till smooth. Add in the yogurt and orange juice. incorporate the flour mixture. Pour into the prepared tin. Bake for an hour till a skewer inserted in comes out clean.
Note: Tin is prepared by spreading some oil in the tin. line with butter paper.
