Zucchini and tomato casserole with herb crumb topping

ZUCCHINI AND TOMATO CASSEROLE WITH HERB CRUMB TOPPING 

Ingredients:
1 Tsp olive oil
2 medium zucchinis sliced lengthwise
2 cans whole tomatoes ( or blanched & peeled tomatoes)
2 tsp basil ( fresh or dried )
2 cloves garlic
1/3 cup Parmesan cheese
1/3 cup bread crumbs
2 tsp mixed dried herbs

Method:

Heat the oil in a skillet. add the zucchini strips and saute till tender and almost done. Keep aside.
Next saute the garlic , tomatoes and basil leaves. Bring it to a boil and cook till it thickens. Remove from the heat and stir in the zucchini.
Preheat the oven to 450 deg Fahrenheit  Oil a shallow oven proof dish or casserole. Spoon the zucchini mixture into the casserole. Mix the bread crumbs , Parmesan cheese and the mixed dried herbs. Spread this mixture evenly over the entire dish. Spray with some cooking oil spray or drop small pieces of butter if you may. Bake for 10 minutes till the top gets evenly browned. Serve it hot .
This makes an excellent main vegetable dish. You can even add aubergines and mushrooms if you like them.
