Nasi Goreng - Vegetarian

Today I'm going to share my vegetarian version of the world famous South East Asian dish Nasi goreng. This literally translates into fried rice. Rice is nasi and Goreng is to fry. Rice is stir fried with mixed vegetables, onion, cabbage etc. Served with Pan fried Tofu, Scrambled eggs, cucumber juliennes and home made chili sambal. 



Chili Sambal

Ingredients

Dried red chili -15 to 20 
Onion - 1 big 
Garlic - 6 cloves 
Tamarind - 1 small piece
Brown sugar - 3 tablespoons 
Salt as required

Method

Soak the red chili in hot water for about 10 minutes. Grind the chopped onion, garlic, chili and the tamarind with half a cup of water. Transfer the ground paste to a pan with 2 tablespoons of oil. Sauté till the oil separates and the raw smell goes. Add the brown sugar and salt and sauté for another 10 minutes. Transfer to a clean bottle. This paste will last for almost a month in the fridge. Add as per taste. 

Pan Fried Tofu: (serves 4) 

Ingredients: 

Tofu - cut into rectangular slices - 8 
Chili paste - 1 teaspoon
soya sauce - 1 teaspoon 
sesame seeds - 2 teaspoon 
spring onions chopped - 1 tablespoon 

Method

Smear the tofu slices with chili sambal and soya sauce. In a pan heat 1 teaspoon oil and put the slices on it. Turn them till they are golden brown on both sides. add the sesame seeds and spring onions and serve hot. 

Nasi Goreng: 

Ingredients:

Rice cooked - 1 cup 
Onion - 1 chopped 
Garlic - 2 cloves chopped fine 
Cabbage - finely sliced 1/2 cup 
Carrots- 1/2 piece finely chopped 
Capsicum - 1/4 cup finely chopped 
spring onions - 1/4 cup chopped 
eggs - 2 scrambled (Optional) 
Salt as per taste 
Soya sauce - 1 tablespoon 
Sesame oil 1/2 tablespoon 
Chili paste 1-2 teaspoon 

Method: 
 
In a large wok , add 2 tablespoons sunflower oil. Add the sliced onions, garlic and stir for 2 minutes. Next add the chopped vegetables and stir fry for about 5-6 minutes. Next you can add the salt, chili paste, soya sauce and sesame oil. Finally add the rice and spring onions and stir fry in high heat for 5 minutes. 

Arrangement: 

In a pretty plate add a bowl of nasi goreng. Serve with the pan fried tofu, cucumber strips, scrambled eggs, and a teaspoon of the home made chili sambal and serve hot.
