Vegetarian Burmese Khow Suey


Khow suey is a Burmese noodle dish made of noodles, and a curried coconut milk gravy and topped with assorted condiments. This dish came to India through the people of the east India company who migrated from Burma during the world war 2. This happens to be a street food in India. Many countries have adopted this and taste has been altered for them. As how normally most international dishes have been adapted to our taste. 

Ingredients : 

Curry paste : 

8 cloves garlic

1/2 inch of ginger 

3 tbsp chopped coriander

1 tsp turmeric powder

2-3 small onions or 1 big onion 

1/2 tsp pepper powder

2 green chillies  

Method

Grind all the ingredients into a smooth paste . Add a little water while blending and set aside.

Coconut broth : 

2 tbsp oil

4 garlic chopped

1 onion sliced 2 green Chili finely chopped

Few curry leaves

Vegetable stock 

2 tbsp chickpea flour or Besar 

1/3 cup carrot diced / sliced

1/4 cup French beans 1 inch pieces

1/3 cup capsicum 

1/2 cup mushrooms 

1/2 cup tofu

1tsp soyasauce

1 1/2 cup coconut milk 

Method

 Heat oil in a fairly large pot. Add the garlic and sauté till golden brown. Add onions, Chili and curry leaves. Sauté for 2-4 mins and add the ground paste and sauté till the raw smell goes. Add the chickpea flour and sauté for a few more minutes. Next the vegetable stock and vegetables. Once vegetables are cooked add the soy sauce, salt as per taste,tofu and finally add the coconut milk. Boil for a minute or two and switch off the flame

Noodles

Boil the fresh noodles in hot water for a minute and drain and set aside. If using dried noodles, boil as per instructions on the packet and set aside. Always rinse the noodles in cold water to avoid clumping. 

Toppings

Fried onions, fried garlic, roasted peanuts, sliced fresh red chillies, chopped spring onions, coriander leaves, julienned ginger. 

To serve: Assemble the noodles in a bowl. Pour the gravy along with vegetables. Top with the condiments as per your wish and enjoy it hot !
