Chocolate Hazelnut Torte

This is a very interesting recipe and is an elegant combination of Chocolates and Hazelnuts. A torte is a rich, multilayered cake filled with whipped cream or mousses.. Today, I have served it as individual cake pieces with ice cream.






Ingredients:
85 grams dark chocolate
85 grams unsalted butter
1 tbsp flour
pinch of salt
2 eggs separated
75 grams caster sugar
1/2 tsp vanilla extract
3 tbsp chopped hazelnuts

Topping:
200 grams sugar
120 ml water
100 gram hazelnuts toasted

Method :
Preheat oven to 180 degree Celsius and grease and line a six inch cake tin.
Melt the chocolate and butter in a double boiler. Set aside. Sift the flour and salt together and set aside.
Beat the egg yolks with half the sugar until pale and thick. Add the vanilla essence and whisk well.
In another bowl, beat the egg whites at medium speed until peaks start to form and gradually add the remaining sugar,beating until stiff. Fold the chocolate and butter into the egg yolks along with the flour mixture and nuts. Finally fold in the stiff egg whites.
Pour the batter into the tin and bake for 30 minutes, or until a skewer inserted in the center of the cake comes out clean. Remove from the oven and demould when cool.
Make a topping by dissolving the sugar in water over low heat, stirring continuously. When golden brown , add the toasted hazelnuts. Sprinkle over the torte, cut individual portions and serve warm with vanilla ice cream. I have also drizzled some caramel sauce over it.
