Orange Raspberry cupcakes -Eggless

Ingredients
1 1/2 cups cake flour 
1 cup yoghurt 
3/4-1 cup brown sugar 
1/2 tsp baking soda 
1 1/4 tsp baking powder 
1/2 cup vegetable oil 
1 tsp vanilla essence 
1 cup raspberries ( fresh or frozen) 

Method
Preheat oven to 180 degree Celsius. Prepare a cupcake tray. 
Beat the yoghurt well removing any lumps. Add the sugar to it. Beat well and add baking powder and baking soda to it. Beat again and set aside for 5 minutes until you see small bubbles. To this add vanilla essence and oil. Mix well until all ingredients are mixed well. Sift in the flour. Gently fold in the raspberries into the mixture. Pour it into the prepared tin. Tap gently to remove any air bubbles. Bake for 30-35 minutes. 
Once the cupcakes are done, let them cool. Ice the cupcakes with orange buttercream frosting. Decorate with fresh raspberries. Serve chilled. 


Orange Buttercream frosting: 

Ingredients:
1/4 cup unsalted butter
2 cups confectioners sugar 
1 tsp vanilla essence 
1 tsp orange liqueur. 

Method
Beat the butter till light and airy. Slowly add the sugar , vanilla essence and the orange liqueur. Beat till the frosting is light. You may color the frosting with food color. Pipe as per your choice.
