Homemade Pav buns with Bhaji

Hello everyone!!! 
Been long since I posted anything. My inlaws are here and I've been quite busy. Yesterday we decided to have Pav Bhaji for dinner. Pav buns are not quite readily available in Singapore. Hence decided to bake them too. 
Pav Bhaji is a maharashtrian fast food dish consisting of a rich vegetable gravy made in butter served with toasted buns. 

Pav Buns : 
Ingredients:
2 cups plain flour 
1 cup milk 
1 tsp salt
4 tsp butter
1 1/2 tbsp milk powder
2 tsp instant yeast 
1 tbsp sugar 

Method
Mix the flour, milk powder, yeast sugar and salt. Add the milk and butter and make a loose shaggy dough. Put the dough in oiled bowl and keep it covered for 45 minutes upto an hour. Punch down the dough and make 16 equal sized balls. Arrange the balls in a greased square or rectangular pan. Cover and let it prove for another 35-40 minutes. Brush it with some milk and bake it at 200 degree Celsius for 15 minutes. Once it's baked to a nice golden brown, take it out of the oven and brush the buns with melted butter. Serve buns toasted with the Bhaji. 

Bhaji masala : 
Ingredients: 
2 cups mixed vegetables ( carrots, beans, cauliflower, peas) 
1 potato boiled & mashed 
1 onion chopped. 
1 capsicum chopped
1 tomato chopped 
1/2 tsp turmeric powder
1 tsp chili powder
1 teaspoon Pav Bhaji masala
2 tsp dhania ( coriander powder) 
Salt per taste 
Chopped coriander
2 tbsp Butter 
Oil 

Method
Heat 2 tbsp of oil in flat pan. Sauté the chopped onions till translucent. Add the capsicum. Sauté well. Add the turmeric, chili, coriander & Pav Bhaji  powders. Add the chopped tomatoes next. Sauté till the mixture is well cooked and the oil is separating. Add the salt and the cooked vegetables along with the mashed potato. Mash the entire curry well. Add the butter and garnish with chopped coriander leaves. Serve the Bhaji with toasted Pav buns, chopped onions and cut lime. Butter is what adds taste to this dish.
