Gado Gado

Gado gado is an Indonesian salad with steamed vegetables, crispy crakers and few other toppings with a spicy peanut sauce. Although this dish is know as a salad, I personally feel gado gado is a main dish and keeps me full for a quite a long time !

Ingredients:
4 potatoes
2 carrots
1 cup french beans cut into an inch length
2 cups of tofu- deep fried
4 eggs, boiled and quartered
fried onions
spring onions chopped (green portion only )
vegetable crackers

For peanut sauce:
2 cups peanuts
2 onions
4 dried red chilli
1 inch ginger
1 tbsp jaggery
1 inch tamarind
2 tbsp dark soya sauce
2 tbsp tomato sauce
salt to taste

Method (peanut sauce) :
In a pan heat a tbsp of oil and fry the peanuts till aromatic. Take the peanuts out into a blender. Add the chopped onions , red chilies , ginger and saute them till soft . Add this to the blender along with the tamarind and peanuts. Grind it to a smooth paste by adding required amount of water. Add the gravy back to the pan. Add the soya sauce, tomato sauce , jaggery and salt. Boil till the gravy gets a bit thick . Check for salt and keep the gravy aside.

Chop all the vegetables and steam them till just tender. Boil and quarter the eggs. Deep fry the tofu cubes till golden brown. Finely chop the spring onions.
While serving , add the required quantity of chopped vegetables , eggs, tofu, fried onions, spring onions. Pour the gravy over the vegetables. Garnish with vegetable crackers and serve it warm or cold.
