Cheesy corn casserole

I had recently bought a can of cream style corn and knew for sure that i did not want to make a soup out of it !! So what else can i do with it ? I browsed the web and saw that a cheesy corn casserole was quite a hit and thought I should give it a try. Most of the recipes warranted the use of a corn muffin mix , but of course I wanted to make it from scratch and also wanted to add an Indian taste to it . Well, that's how curry powder entered the scene :-) Here is my recipe and must say , it came out really well !



Ingredients :
1 tbsp olive oil
1 tsp butter
1 cup corn
1 can creamed corn
1 onion chopped
1 clove garlic
1 green chilli chopped
1 capsicum chopped
1 cup grated cheddar cheese
1/2 cup Parmesan cheese
2 tsp plain flour
1 cup skimmed milk
2 eggs
1 tbsp curry powder
handful of chopped coriander leaves
salt to taste

Method :
Heat the olive oil and butter together in a heavy bottomed pan. Add the chopped onions, garlic and green chili. Saute till soft. Next add the fresh corn and capsicum, cooking it till it is almost done. Add the curry powder and saute till the raw smell is gone. Next add the plain flour and roast well. Add the milk and cook till it thickens slightly. Switch off the gas.
Now add the creamed corn ,beaten eggs, coriander leaves and cheddar cheese. Mix well and pour the entire contents into a baking dish. Sprinkle the Parmesan over it and bake it at 180 deg Celsius for about 20-25 minutes till it is bubbling and golden. Serve the casserole with crispy toast.
