ENCHILADAS
Enchiladas are basically corn tortillas(rotis) rolled with a vegetable or meat stuffing, soaked in a spicy tomato sauce and baked with cheese on it. Enchiladas originated in Mexico, where the practice of rolling tortillas around other food dates back to the Mayan times.
Ingredients :
4 corn tortillas
1 cup mixed Parmesan and queso fresco
for filling :
1 cup chopped onions
1/2 cup green capsicum chopped
1 1/2 cups soaked & chopped nutrela (soy nuggets )
1/2 packet burrito seasoning
1 cup tomato sauce
salt & pepper to taste
Method :
To make the filling saute onion and capsicum in 1 tbsp oil. Add the soy nuggets , burrito seasoning powder , tomato sauce , salt and pepper. Saute till done . Heat the corn tortillas in a hot plate. Roll each tortilla with some filling and arrange in a baking dish. Once all the tortillas are rolled and placed , sprinkle the cheese on them and bake at 180 degree celcius for about 20 minutes. Serve hot .

ReplyDeleteThis was lunch last Saturday :). Some small tweaks- used whole wheat homemade tortillas, didn't have burrito seasoning so just made something up! But turned out great :)
