Tahu Goreng
Tahu Goreng is basically fried tofu … A yummy dish high in proteins and pretty low in carbs and vegan. Famous in Indonesia, Malaysia and Singapore.
Fried cubes of tofu drowned in a delicious peanut gravy and topped with juliennes of carrots, cucumber, blanched beans sprouts , fried onions and finally topped with homemade chili sambal. Such a yummy and comforting lunch 😋😋
For peanut sauce:
Ingredients :
2 cups peanuts
2 onions
4 dried red chilli
1 inch ginger
1 tbsp jaggery
1 inch tamarind
2 tbsp dark soya sauce
2 tbsp tomato sauce
salt to taste
Method (peanut sauce) :
In a pan heat a tbsp of oil and fry the peanuts till aromatic. Take the peanuts out into a blender. Add the chopped onions , red chilies , ginger and saute them till soft . Add this to the blender along with the tamarind and peanuts. Grind it to a smooth paste by adding required amount of water. Add the gravy back to the pan. Add the soya sauce, tomato sauce , jaggery and salt. Boil till the gravy gets a bit thick . Check for salt and keep the gravy aside.

Remaining ingredients : (serves 4 )
Tofu / tahu - 3 slabs
Carrot juliennes -1 cup
Cucumber cubes -1 cup
Bean sprouts blanched -1 cup
Fried onions as required
Spring onions chopped as required
Chili sambal as required.
Chili Sambal:
Ingredients:
Dried red Chili - 15 to 20
Onion - 1 big
Garlic - 6 cloves
Tamarind - 1 small piece
Brown sugar -3 tablespoons
Salt as required
Method: Soak the red Chili in hot water for about 10 minutes. Grind the chopped onion, garlic, Chili and the tamarind with half a cup of water. Transfer the ground paste to a pan with 2 tbsp oil. Sauté till the oil separates and the raw smell goes. Add the brown sugar and salt and sauté for another 10 mins. Transfer into a clean bottle. This paste lasts for almost a month in the fridge. Add as per taste requirement.
Final arrangement:Arrange the fried tofu cubes in a shallow dish. Pour the peanut sauce over it. Garnish with the julienned carrots, cucumber cubes, blanched bean sprouts, friend onions, spring onions and Chili sambal. I have also added sliced fresh red chillies. This is one hearty salad !!!
