Mee Rebus - vegetarian version
Hi friends, today I am posting the recipe of the vegetarian version of Mee Rebus. This is a famous south East Asian noodle recipe.
This dish is made of fresh noodles served with a spicy sweet gravy made out of sweet potatoes and chili paste. It is served garnished with many different ingredients. These can be altered according to taste.
Mee Rebus vegetarian
Ingredients for gravy :
6 dried red chilies
1 onion
1 inch piece galangal ( blue ginger)
2 stalks lemon grass
2 sweet potato
1 tsp sugar
1/2 cup peanuts roasted
2 tbsp teocheo
Ingredients for garnish :
Fresh yellow noodles
Bean sprouts
Tofu cubed & fried
Spring onions chopped
Fried onions
Hard boiled eggs
Puffed tofu
Green lime
Method : Heat oil in a deep pan. Grind the ingredients for the gravy and add to the heated oil. Fry till the raw smell goes. Add water and boil till the gravy is well cooked and a bit thick. Adjust thickness by adding water.
To serve, arrange the noodles in a bowl. Pour gravy and garnish as per taste and serve hot.
Teocheo: Taucheo or soy bean paste is made from yellow soy beans. The yellow beans are salted and fermented, much like the process of making soy sauce. There are a few variations of taucheo in the market: whole beans, half-mashed, or fine. The difference is in the texture of the fermented soy beans. Taucheo is salty, but very flavorful with a smokey and somewhat yeasty aroma. It delivers a depth that can’t be found in regular salt.
