Savory Vegetable Pancakes



We are all on a low carb diet hoping to lose some weight and get healthier 😅 So here is my recipe for a scrumptious savory pancake filled with veggies. 



Ingredients

1 medium carrot, grated

1 onion, sliced fine 

1/2 capsicum, chopped fine 

1 bunch back choy, sliced fine 

1 garlic chopped 

Handful of coriander leaves chopped

1 red chili chopped fine. 

2 eggs 

1 tbsp whole wheat flour 

Salt to taste

1 tsp chili flakes. 

1/2 cup cheddar cheese shredded. 

1/2 cup milk or as required  




Method

In a pan add a tablespoon of oil and sauté all the vegetables. Season with salt and chili flakes. Once cooked let it cook. In a bowl whisk the eggs, add the veggies, seasoning , milk and cheese and mix well.  You may substitute buttermilk or soy milk to milk. In case you want to avoid eggs, then just replace it with another tablespoon of flour and add more liquid to get a good consistency of batter. 

In the same pan add ladleful of the batter and cook till golden brown and then flip. In the similar way use all the batter to make the pancakes. This is an extremely healthy breakfast dish as it contains protein and vegetables. You may add vegetables of your choice as long as they are not too wet.
