Chargrilled Stuffed Mini Peppers



 When I found these colorful harvest of mini peppers at the market recently I immediately bought it. It looked so fresh, colorful and crunchy !!! 



Today I’ve made stuffed mini peppers and brought an Indian twist to it. 

Stuffing :

 Ingredients :

1 big potato , boiled and mashed  

Half a cup of peanuts , roasted and pounded 

1/2 tsp turmeric powder 

1 tsp chili powder 

1.5 tsp coriander powder 

1 tsp cumin powder

1/2 tsp amchur (dry mango) powder 

1/2 cup of coriander leaves chopped 

Salt as per taste. 



Method:

In a bowl add the mashed potato, all the spices, salt, peanut powder and coriander leaves. Mix it well and keep it aside. Meanwhile wash and clean the peppers and scoop out the stalk and seeds. Dry it well. Fill each pepper with the stuffing. 



Heat a pan with a few drops of coconut oil. This imparts a wonderful flavor as you chargrill the peppers. If you wish you may grill them on a grill plate or even even barbecue them. Serve them hot with fried rice or as you wish.
