Chettinad Mushroom Curry with brown rice

Chettinad cuisine is perhaps the most renowned fare in the Tamil Nadu repertoire and it uses a variety of spices and the dishes are made with fresh ground masalas. 


Ingredients:
1 packet, button mushrooms
1 big onion, sliced fine 
1 green chili sliced 
1 tomato finely chopped
1 sprig Curry leaves
1 tsp mustard
1/2 tsp each of turmeric powder, coriander powder, jeera powder & garam masala
2 tsp coconut oil
Salt to taste. 

To grind:
1 tsp peppercorn 
1/2 tsp methi seeds 
1/2 tsp saunf 
1 red chili
2-3 cloves garlic
1/2 onion chopped 
1/3 cup peanuts
1 cup grated coconut 
1 tsp coconut oil

Method :
In a kadai (pan) heat a teaspoon of oil and add all the ingredients which are to be ground. Fry till aromatic. Cool it and grind to a smooth paste with water. 
In the same pan, add 2 tsp of oil. Add mustard seeds, curry leaves, garlic, onions and green chili. Fry til soft. 
Add the chopped tomato and sauté for about 5 mins. Next add in all the spice powders and salt. Fry till the oil separates. Add the chopped mushrooms and sauté for a few mins. Add half a cup of water and cook till mushrooms are soft. Next add in the ground paste and some more water till you get a good gravy consistency. Adjust salt to taste and boil for a few minutes in a low flame. Finally garnish with chopped coriander leaves and serve hot with brown rice.
