Roti Jala with Vegetable & Egg Dalcha



Roti Jala with vegetable & egg dalcha. It is a very popular dish from Malaysia and Indonesia. It literally means lace pancake or net bread and is usually eaten with a vegetable or chicken gravy.
It’s made out of wheat flour, egg and milk with a pinch of turmeric which gives its classic yellow color.

Roti Jala :
Ingredients:
1 cup all purpose flour
1/4 tsp turmeric powder
salt to taste
1 egg
3/4 cup milk
3/4 cup water
Method:
Add the flour,turmeric powder, egg, and salt in a bowl. Keep whisking as you add the milk and water. Whisk it to a smooth flowing batter. Next filter the batter to make sure it is silky smooth. 
To make the roti jala you need to have a specialized utensil which resembles a cup with multiple outlets beneath, which aids in the creation of the "net-like" effect. Add some of the batter into this cup and drizzle it over the greased pan in a circular motion so that it resembles a round net or doily. Once the top is not glistening anymore you can remove it with a spatula and fold it into a triangle and keep it warm in a casserole. 
  
                       





Vegetable & Egg Dalcha : 
Ingredients:
2 potatoes, medium cubed
1 carrot , medium cubed
1 onion sliced
1 tsp ginger garlic paste
few curry leaves
1/2 tsp mustard seeds
1/2 tsp fennel seeds
1/2 tsp turmeric powder
2 tbsp curry powder
salt to taste
1/2 cup coconut milk
2 tbsp coconut oil

 Method :
In a Deep kadai/ pot, add the coconut oil. when it is a bit hot, add the mustard seeds, fennel seeds, curry leaves, sliced onions, and the ginger garlic paste. Saute till the raw smell goes. Add the potatoes, and carrots and saute for a while . Next add the turmeric powder and curry powder. Once its well sauteed add enough water and boil till the vegetables are cooked and soft. Meanwhile if you want eggs in your gravy, boil the eggs as many as required. Once the vegetables are cooked , add the coconut milk and water so that you get a good gravy consistency. You may add the shelled eggs at this time . 
Serve the hot dalcha with the warm Roti Jala.
