Dark Chocolate, Pistachio & Strawberry Cake

Chocolate, berries and nuts always go hand in glove. Their flavors blend beautifully and the end result is one awesome dessert !! 

This cake has been an all time favorite and quite a few of my friends have asked for the recipe. So here it goes ...... 






Dark chocolate Cake
2 cups brown sugar
1 3/4 cups flour
3/4 cup cocoa
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup buttermilk 
1 cup brewed strong black coffee
1/2 cup oil 
1 tsp vanilla 
Preheat oven to 350 deg F. Butter and flour two 9 inch pans. In a large bowl whisk all dry ingredients. Add wet ingredients. Beat for 2 mins. Pour batter evenly into pans. Bake for 30-35 minutes. 

Pistachio cream buttercream:
1 cup unsalted Pistachio
1/2 cup Irish cream baileys (optional)
2 cups butter
8 ounces cream cheese 
2 cups powdered sugar
Green color (optional) 
 Powder pistachio and make a paste with Irish cream and green color. Whisk butter, cream cheese, till fluffy. Add pistachio paste, powdered sugar. Whisk till light and fluffy. Use this for frosting. 

I sandwiched the cake layers with chopped strawberries and decorated with halved strawberries on top
