Zucchini Bajjis

Zucchini is also known as courgette or summer squash. It is a very rice source of potassium , folate and provitamin A. It's also very low in calories. 
Zucchini is a very versatile vegetable and I've made soups, bakes and stir fry with it. Today I had only one zucchini left in the fridge. It was too less for any of the above dishes. Hence decided on making bajiyas. Not bad ....very tasty. 

Ingredients: 
1 medium zucchini grated 
1 medium onion chopped 
3 tbsp besan / chick pea flour 
2 tbsp rice flour 
1 tsp chilli powder 
1/2 cup chopped coriander leaves 
Salt to taste 

Method
Let the grated zucchini rest for a while with a little salt. Squeeze out the excess water. Add the chopped onions, the chickpea/besan flour, rice flour, chili powder, salt and coriander leaves.  
Mix well and make medium sized balls, flatten and deep fry in hot oil. 
Serve hot with sauce or chutney.
