Linguine with creamy pumpkin sauce & walnuts

Today I made pasta with a creamy pumpkin sauce. The sauce is very creamy due to the carbohydrate content and yellow pumpkin is a very good source of vitamin A. 

Ingredients
1 cup chopped yellow pumpkin
1 medium onion chopped
3 cloves garlic 
1 cup skimmed milk
1 tbsp mixed Italian herbs 
1 tsp red chili flakes
Handful of roasted chopped walnuts
Chopped coriander leaves
2 tbsp olive oil 

Method

In a pan , heat 2 tbsp olive oil. Add the garlic cloves and chopped onions. Sauté till translucent. Add the chopped pumpkin, chili flakes and herbs. Cool till soft. Add salt and the skimmed milk. Let it boil till the pumpkin is really soft. Blend it till it's almost smooth. Meanwhile boil the pasta of your choice in a pot till aldente. Add the pasta to the sauce and serve warm garnished with chopped walnuts and coriander leaves.

  1. I'm in love with pumpkin sauce, in fact I put together a jar just this weekend to give me a weeknight dinner :). I also chuck in a red pepper while roasting the pumpkin. Lovely click btw!
