Vegetarian Mee Siam

Ingredients : 
1 packet Bee Hoon ( Rice noodles) 
1 kg bean sprouts 
5 Spring onions
3 slabs tofu cubed & fried
5 eggs hard boiled
5 green limes
Red chili paste 
Oil 

Blended : 
30 dried chilies
2 large onions
3 garlic 
1tsp taucheo ( soya bean paste ) 

Gravy : 
30 dried chilies
3 onions
5 garlic pods
5 cashew nuts
5 almonds
3 tsp taucheo
Tamarind juice, sugar , salt & water 

Method :
Heat oil. Add the blended paste. Sauté till raw smell is gone. 
Add hot water to the bee hoon till it is al dente. 
Add bee hoon to the gravy and toss till well coated. Add the bean sprouts and toss. Switch off the stove. 

Gravy : Heat oil in a wok. Add in the blended gravy ingredients. Cook till aromatic. Add tamarind juice, salt, sugar and water. Boil till done. 

Serve the noodles with the gravy and garnish with the tofu, eggs , lime slice and the chilli paste. 

Teocheo: Taucheo or soy bean paste is made from yellow soy beans. The yellow beans are salted and fermented, much like the process of making soy sauce. There are a few variations of taucheo in the market: whole beans, half-mashed, or fine.  The difference is in the texture of the fermented soy beans. Taucheo is salty, but very flavorful with a smokey and somewhat yeasty aroma. It delivers a depth that can’t be found in regular salt.
