Sweet corn & Zucchini pancake fritters

My dear daughter's exams are going on. You know how it is during exams .... kids get quite hungry with all the studying . At the same time they get irritated with the same food that they eat everyday. Today when my daughter returned from school.... wanted something interesting to eat. She wanted a real heavy snack so that she need not eat dinner. Well , This is what i made . 

Ingredients

4 tablespoons plain flour
2 tablespoons cottage cheese
2 eggs
3/4 cup milk
1/2 cup of sweet corn niblets (frozen & thawed)
1/2 zucchini grated
salt to taste 
1 tsp red chilli flakes ( collected from all the pizzas I've ordered )

Method :

Whisk the plain flour, milk, cheese & eggs together till yoiu get a smooth batter, not too thin. Add the corn, zucchini , salt and red chilli flakes. Pour the batter on a tava/ pan like a pancake. Drizzle some cooking oil or olive oil around it and cook till light golden brown. Flip it around and when done, serve the hot pancake fritters with salsa.  The pancakes are soft and creamy in the inside and crispy on the outside.Perfect for a rainy day.
