Egg N Veg Bechamel with garlic bread

Hi friends, today was one of the dull days where I just didn't know what to cook. So I started rummaging through my fridge. I had quite a few eggs and some mushrooms and capsicums. So todays dish is thanks to what I found in my fridge.

Ingredients: 
eggs- hard boiled  2-3

for the sauce :
1 tsp olive oil
2 tsp plain flour
1 cup milk
salt to taste
1/2 chilli powder
1/2 tsp oregano powder

Method : Heat the olive oil in a pan. Add the plain flour and roast till the raw smell is gone. Take the pan off the heat and add the milk to it and stir till you get a thick sauce without lumps.Add salt , oregano powder and chilli powder to taste. Keep the white sauce aside.

for the sauteed vegetables :
1 tsp olive oil
1/2 a capsicum chopped
1 cup finely chopped mushrooms
1 onion chopped
1 clove garlic chopped
handful of coriander leaves chopped

Method : Heat the olive oil. Add the chopped onions and garlic. Saute till translucent. Add the chopped capsicum . Stir till slightly cooked. Next add the mushrooms. Once the vegetables are cooked and semi dry add the vegetable mixture to the white sauce. Mix in the chopped coriander leaves.

for garlic bread :
1 loaf french bread
1 tbsp butter
1 clove garlic minced
salt to taste

Method : Slice the french loaf into sections. Mix the butter with minced garlic and season with salt and oregano powder. Apply the garlic butter between the cut sections. Roll the loaf in aluminium foil and roast in 180 degree oven for 15-20 minutes.

To serve:

Pour a bed of white sauce and vegetables. Place a cut egg on it. Serve with hot garlic bread .
